Meet the talented Chef David Bancroft of Auburn’s Acre and Bow + Arrow. You can chat with Chef Bancroft and try some of his incredible dishes at the Al Fresco Reserve Tasting at Harvest Wine & Food Festival October 25! When did you know you wanted to be a chef? I used to follow my grandmothers around in the kitchen dipping my fingers in the sauce pot or picking at the pot roast. When that same excitement for creating and experiencing the joy of cooking for family began to distract me in college, I knew it was time to go after it.
What is the one ingredient you can’t live without? Rice & Gravy...wait...can that be one ingredient? No, then probably garlic.
What’s your favorite wine pairing? I love pairing fun and delicious white wines with spicy foods!
What’s the inspiration behind your restaurant names? I named our first restaurant 'Acre' after I purchased one actual acre of land in downtown Auburn. I wanted a piece of land big enough that I could grow my own fruit and vegetables. The second restaurant name, 'Bow & Arrow', was formed after my passion for bow hunting during the fall and winter.
What are you most proud of accomplishing throughout your career? I am most proud of the restaurant culture that we have created at both locations. Our teams are happy every day, and their enthusiasm inspires me to push the limits and have fun!
