Nick Fielding
Nick is responsible for overseeing all operational aspects regarding the re-brand and re-launch of Asia de Cuba worldwide, as well as development of future brand opportunities and expansion.
Fielding received a B.S. (Hons) in Hotel and Restaurant Management from the University of Middlesex in London, and is a certified sommelier from the Court of Master Sommeliers. He launched his career at Turnberry Isle Resort & Club, a Rafael Hotel, in Aventura, FL where over the course of three short years, quickly worked his way up from management trainee to Director of Restaurants in 2000. At which point, Nick began his working relationship with Chef Luis Pous.
Nick moved to California to become assistant general manager at Wolfgang Pucks flagship restaurant Spago, Beverly Hills. It was at this stage that Nick credits his most significant career development to his mentor Lee Hefter. Since then Nick also served as General Manager of Wilshire Restaurant in Santa Monica, for four years, (the recipient of 3 star review in the Los Angeles Times).
Nick then reunited with Chef Luis Pous for a second time, first at Little Palm Island Resort & Spa where he was the Food & Beverage Director (“No. 2 hotel dining room in the United States” as voted by Conde Nast Traveler) and most recently as Corporate Director of Restaurants for Noble House Hotels. Fielding and Chef Pous have developed and continue to maintain a working partnership for over a decade.
